Fried Kidneys With Bone Marrow Butter, Anyone?

Kidneys are rich in many nutrients such as riboflavin, vitamin B12, iron, and selenium.

They also contain Vitamin K2, which helps to distribute calcium throughout the body where it is needed most. When combined with the nutrition and flavor powerhouse that is bone marrow butter, they instantly become a luxurious, nutrient-dense meal you can drool over.

Kidneys are good sources of protein, zinc, Vitamin A, copper, and folate. Just one 100-gram portion serving of kidney contains about 20 grams of protein! Other nutritional benefits of kidneys include:

  • Riboflavin, which raises the metabolic rate, and boosts energy levels
  • Vitamin B12 and Folate for healthy brain function and nervous system
  • Iron to keep body tissues oxygenated
  • Selenium as an antioxidant that boosts the immune system
  • Vitamin K2, which activates the calcium-binding actions of two proteins — matrix GLA protein and osteocalcin, which help to build and maintain bones
  • Copper as a powerful antioxidant to also helps with iron absorption and strengthen connective tissue
  • Zinc for healthy thyroid function and to help the body heal from wounds
  • Vitamin A to strengthen both the digestive and respiratory system

Meanwhile, bone marrow butter is rich, creamy umami, and chock full of fat-soluble vitamins, minerals, stem cell precursors, and many other hormonally supportive compounds.

Kidney can be very strong-tasting, iron-rich, and can sometimes even be a bit bitter. The bone marrow butter (good recipe here) slathered on top before eating can definitely help, but also, to offset this, I soak the kidneys in dairy kefir for 24 hours, then rinse and sous vide at 140F for 4 hours with a Joule wand. In the sous vide bag for this recipe, I added Colima salt, black peppercorns, fresh noni honey from Kauai Farmacy, Primal Kitchen dijon mustard, and Primal Kitchen olive oil and balsamic vinegar. Then I sautéed the kidneys in grass-fed butter for a quick 3 minutes per side and they became…

…melt-in-your-mouth, oh-so-kidney good!
