This Easy Keto Pot Roast Deserves a Spot in Your Meal Plan

A Slow Cooker Pot Roast for Your Keto Meal Plan

Your keto meal plan doesn’t have to be boring with this keto pot roast. Even better, this slow cooker roast beef recipe has minimal carbs for a guilt-free Thanksgiving dinner!

Ingredients:

  • 900 grams boneless rib roast
  • 16 ounces grape tomatoes
  • 1 garlic head, peeled
  • 8 sprigs fresh thyme
  • 3 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • garlic powder
  • kosher salt and pepper

Directions in Making Your Keto Pot Roast

Step 1: Preheat the Oven and Prepare the Ingredients

Preheat the oven to 350° F. Prepare your ingredients by thawing the beef and peeling the garlic cloves.

Tip: When you buy your rib roast, don’t be afraid to choose one with a high-fat content for this keto recipe.

Step 2: Season the Beef with Garlic, Salt, and Pepper

Place the beef on a wooden chopping board to make this step easier. Season the beef with about a teaspoon of garlic powder, a teaspoon of salt, and half a teaspoon of pepper.

You can also season it however you like, but make sure you cover both sides.

Seasoning doesn’t just add flavor to the meat. The pepper makes the beef’s meaty flavor more distinct while the salt makes sure the flavor reaches the sides of the roast from the inside.

Step 3: Roast the Sides and Glaze the Pan

Place the seasoned beef in a big roasting pan, and sear the beef on both sides until brown. Use the balsamic vinegar to deglaze the roasting pan and cook the beef for one minute.

Tip: Keto diets require you to consume more fat and protein to promote natural weight loss. Grass-fed meat is filled with these nutrients, especially polyunsaturated fats.

Step 4: Make the Tomato Mixture

In a medium-sized bowl, add the tomatoes, olive oil, thyme, garlic, and a quarter teaspoon each of salt and pepper. Mix the ingredients together until everything is well-combined.

This tomato mixture’s slightly tangy flavor and its red hue are perfect for your Thanksgiving dinner. Tomatoes are filled with nutrients, such as vitamins C and K, dietary fiber, and potassium.

Step 5: Spread the Mixture on the Beef

Use a spatula and cover the outside of the beef with the tomato mixture. Turn the beef over to get to the bottom of the beef and then pour the rest of the mixture into the pan when you’re done.

Step 6: Roast the Beef Until Medium-Rare

Cover the roasting pan and let it roast for about an hour until it’s medium-rare. Depending on the thickness of the beef, the time may take longer.

If you want the beef cooked more, you can let it roast for two to three hours.

Step 7: Slice the Roast Beef

A person cuts into meat on a cutting board.

Once done, transfer the beef to a wooden cutting board, and let it cool for 10 minutes. Slice it as thin as you want.

If you want to cook it a little more, put it back in the pan and roast it for another 30 minutes.

Step 8: Serve with Tomatoes and Garlic

Serve the sliced beef on a platter. Add some cut-up cherry tomatoes and cloves of garlic to taste.

If you’re missing your mashed potato side dish, make a no-carb alternative using cauliflower.

The Keto Diet

A ketogenic diet is a weight loss diet that involves low-carb and high-fat recipes to replace your carb intake with fat. When your body doesn’t receive carbs, it can go into ketosis.

Ketosis Definition: A metabolic state where the body uses fat for energy.

This means avoiding all the usual carbs such as pasta, bread, rice, and potatoes. This diet can be difficult, especially due to all the high-carb content of affordable and accessible foods.

It’s important to make your own keto-friendly food, but this doesn’t mean you shouldn’t choose a tasty Thanksgiving or regular keto recipe to enjoy.

4 Tips to Elevate Your Keto Pot Roast

The instant pot roast keto recipe above is enough to wow your family and friends, but why stop there? There are many ways to make it even more delicious and keto-friendly!

1. Try the Mississippi Pot Roast Keto

There may be so much ado about the Mississippi keto pot roast, but it’s all for a good reason: it is mouth-watering. Unlike the traditional pot roast, this is less spicy.

It also pairs well with French gravy called au jus gravy, as well as a ranch dressing mix you can make from scratch.

The recipe for keto Mississippi pot roast is similar to the one above, except you can skip the other fancy ingredients like thyme and balsamic vinegar.

What you need to focus on is the au jus gravy, which you can make using the following simple ingredients:

  • 1/4 cup of drippings from your meat
  • 2 cups of bone broth
  • Salt and pepper (optional)

You can cook all these in a medium-high skillet beginning with the drippings or the fat, followed by the rest of the ingredients. Slowly stir them to make sure it doesn’t solidify.

The au jus gravy mix should be thinner than the regular meat gravy you know.

For your keto ranch dressing mix, you can buy it from the store or follow a recipe.

2. Complement Your Keto Pot Roast with Other Healthy Foods

As mentioned, you can pair the crock pot roast with mashed cauliflower or cauliflower rice. You can make the latter by grating the vegetable, squeezing it with a muslin cloth and letting it dry.

Cook it the way you make your rice. It’s even possible to sauté it with other keto vegetables like broccoli, spinach, and kale.

You can pair the keto pot roast with grilled mushrooms or a green salad with simple ingredients as your dressing. This may be a tablespoon of apple cider vinegar, olive oil, and minced garlic (or garlic powder).

3. Learn to Substitute

A keto diet meal plan can be restrictive. As much as possible, you want to stick to foods considered to be keto low carb.

If you can’t find the veggies, fruits, and seasoning you need for your slow cooker pot roast, though, don’t sweat it too much. You can always learn to substitute:

  • Rutabaga for cauliflower
  • Bay leaves for an Italian seasoning
  • A teaspoon or a squeeze of half a lemon for apple cider vinegar
  • Rump roast for chuck roast

4. Watch Out for the Net Carbs

Your keto meal plan or instant pot chuck roast keto recipe won’t work if you fail to keep track of your net carbs against your total carbs.

Net Carbs Definition: The difference between total carbs and fiber

Total Carbs Definition: Refers to the overall carbohydrates including a particular food has

If you want to eat more without putting your keto diet in jeopardy, consider adding more fiber into your meal. In this case, increase your intake of vegetables, especially cruciferous ones.

When it comes to eating out or visiting another house for a family dinner, it can be hard to follow your diet. You can easily remedy this by bringing your own dish to share with everyone which ensures you have something to eat.

This is a great way to avoid putting on any holiday weight!

Most of all, you can provide your body with more collagen, which is the building block of your vital organs such as the skin and the gut. It’s a good dietary complement for supplements like Multi-Collagen Complex!
