Probiotic Blueberry Pancakes
Yield 12 Pancakes
8 organic eggs
8 tbsp. grass-fed yogurt
1 cup of coconut oil, melted
20 drops liquid stevia
1/2 tsp. pink salt
8 tbsp. coconut flour
1/2 tsp. aluminum –free baking powder
1 cup organic blueberries
Step #1: Mix all wet ingredients (except yogurt) together in a large bowl.
Step #2: Add flour, salt, baking powder and berries.
Step #3: Let the mixture sit for about 5 minutes
Step #4: Pour onto a greased skillet (greased with coconut oil) at low heat.
Step #5: Flip and serve!
Step #6: Add grass-fed yogurt on top after the pancakes are finished…it tastes good and adds the probiotics, protein and healthy fats.

Everyone loves pancakes and now we can enjoy them grain-free. Grains are inflammatory and are hazardous to our health. This recipe uses coconut flour and aluminum-free baking powder which are very low-carb. Blueberries are extraordinarily rich in nutrition including anthocyanin antioxidants and are low in sugar.
Grass-fed yogurt is a great probiotic enriched drink through grass-fed milk. The yogurt is also loaded with omega 3 fatty acids, branched chain amino acids and vitamin K2 while providing mega-doses of beneficial microorganisms.
