Coconut flour is notorious for absorbing a lot of liquid, and you’ll see this happen while working with the dough.

Pair coconut flour with delicious ingredients like various kinds of cheese, flavorful herbs and spices, and a little bacon, and you have tasty cheesy biscuits that are kid-friendly and perfect with just about everything.

Ingredients

  • Mozzarella cheese – shredded mozzarella cheese with low moisture will produce the best results.
  • Cream cheese – full-fat plain cream cheese
  • Large eggs
  • Coconut flour – this naturally gluten-free flour is the base of this biscuit recipe and cannot be subbed with another flour. I buy coconut flour from Wildly Organic.
  • Baking powder
  • Cheddar cheese – divided shredded cheese; a portion will go into the biscuits, and the remaining cheese will top the biscuits for that classic cheddar biscuit look
  • Bacon – about two ounces of cooked and chopped bacon; or conveniently use storebought bacon bits. I suggest farm-fresh bacon from White Oak Pastures.
  • Seasonings – dried parsley, dried dill weed, onion powder, garlic powder, salt, and pepper; alternatively, you can use 1-ounce (or two tablespoons) of dry ranch seasoning

Substitutions and Variations

This crack biscuit recipe is naturally gluten-free, grain-free, and nut-free. The combination of cheeses is essential in this recipe as that is what gives this keto dough proper texture. This recipe is a spin-off of the popular fat head dough recipe made predominately with mozzarella cheese. 

As a result, this recipe cannot be modified to be dairy-free, Whole30, or true paleo. Some people on the paleo diet tolerate dairy and would, therefore, follow the recipe as written, taking care to make sure the bacon is paleo compliant. 

Adapt keto crack biscuits to best suit your diet. There are several easy ways to modify the recipe and adjust for particular dietary needs, as listed below.

  • Keto diet – This recipe is naturally low-carb and keto-friendly.
  • Low oxalate diet – Coconut flour is a great low-oxalate flour. All the other ingredients and also low-oxalate, making these biscuits a suitable choice for anyone on a low-oxalate diet.
  • GAPS –  Ensure that all ingredients are GAPS-compliant ingredients. Cheeses should be shredded at home as store-bought shredded cheeses often contain anti-caking agents. Step-By-Step Directions

Step one: Preheat oven

Preheat the oven to 400 degrees Fahrenheit (204 degrees Celsius). Grease an 8×8 baking dish and set aside.

Step two: Melt cheese

Melt the mozzarella cheese and cream cheese in a microwave-safe bowl in 30-second increments until completely melted and smooth. Stir between every increment. Alternatively, melt on the stovetop in a small saucepan over low heat, stirring regularly.

Step three: Blend dough

Add coconut flour, baking powder, and all dry seasonings to the bowl of a food processor with the s-blade attachment. Pulse to combine.

Add the eggs and melted cheese mixture to the dry ingredients in the food processor. 

Turn on and mix until thoroughly combined. Admittedly, the food processor is a game changer in this recipe. I first tested this crack biscuit recipe with a hand mixer and standard whisk beaters, but it did not work.

The melted cheese cooled too quickly and seized around one beater without incorporating into the dry flour. After that, I only recommend using a food processor with an s-blade attachment.

Step four: Fold in cheese and bacon

Transfer the dough to a large mixing bowl. Fold in cheddar cheese and bacon, reserving a little bit of both for topping, if desired. Shape the dough into a round ball.

Step five: Cut sections and shape

Transfer the dough onto a cutting board. Next, using a sharp knife, divide evenly into twelve sections. First, cut the dough ball in half, then half again. Finally, divide each quarter into three sections, making twelve even portions.

Roll each section into a ball between the palms of your hands and arrange them in the prepared baking dish. Gently press on the remaining shredded cheese and bacon for garnish if using. As you press, flatten the tops slightly.

Step six: Bake

Bake for 20-25 minutes or until the cheese on top melts and the dough cooks through.

Remove to a wire rack and cool before serving.
